GENERAL INFORMATION

It is a vegetable belonging to the Asteraceae (Composite) family that is characterized because its flowers are composed of the fusion of hundreds of tiny flowers. From the central part of the plant the stem develops which ends up producing a head that constitutes the edible part of the plant. There are many species but very few are cultivated, they differ mainly by their shape, size and color, the most widely cultivated being the White, round in shape, small in size and with compact central leaves of green color; and the Violeta, of good size and purple color.

It is typical of winter and its collection usually begins around October until spring. Harvesting is manual, selecting the fruit according to its maturity and with a collection at intervals of one week. It is grown in countries with a warm climate, without the presence of frost, in a soil rich in nutrients and with a good degree of humidity.
